What kind of cookies are best for the crust?

For the 200g of cookies in the base and the 100g for the topping, you want a sturdy, subtly sweet biscuit. Traditional Graham crackers are the classic American choice and work wonderfully. If you are in Europe, Digestive biscuits are the absolute best option because of their texture and light buttery flavor. Vanilla wafers or simple Maria cookies also work perfectly in a pinch!

Can I use a different size pan?

This recipe is specifically developed for a tall 18 cm (7-inch) springform pan to give it that impressive, thick, bakery-style height you see in the photos. If you only have a standard 20 cm (8-inch) or 23 cm (9-inch) pan, you can still make this recipe! Just keep in mind that your cheesecake will be thinner, and the layers won’t look as tall. The chill time will remain the same.

One of the best things about this no-bake dessert is how versatile it can be. While the original lemon and banana combination is my ultimate favorite, here are a few ways you can customize it:

  • 1-2 ripe bananas, sliced into thin rounds

  • 300 g cream cheese (10.5 oz), softened to room temperature

  • 300 g sweetened condensed milk

  • 150 ml fresh lemon juice (approx. 5 fl oz)

  • Zest of 1 fresh lemon

  • For the Topping:

  • 100 g cookies (3.5 oz), roughly crushed

  • 60 g white chocolate, melted for drizzling

Directions

  • Prepare the Crust: Crush the 200g of cookies into fine crumbs. Pour in the 90g of melted butter and mix well.
  • Press the Base: Pour the crumb mixture into your 18 cm (7-inch) springform pan. Press it down firmly and evenly into the bottom.
  • The Banana Layer: Peel and slice your bananas. Arrange the slices in an even layer directly on top of the cookie crust.
  • Mix the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Pour in the sweetened condensed milk and mix until combined.
  • Add the Citrus: Add the fresh lemon zest and the 150ml of fresh lemon juice. Beat the mixture for another 1-2 minutes until it naturally begins to thicken.
  • Pour and Chill: Pour the thick lemon filling over the banana layer. Smooth the top. Place the cheesecake in the fridge to set for 3 hours.
  • Decorate: Once fully set, remove from the pan. Crush the remaining 100g of cookies and scatter them over the top.
  • The Finishing Touch: Melt the 60g of white chocolate and drizzle it generously over the top of the chilled cheesecake. Serve and enjoy!
