  • 280g Digestive biscuits (or Graham Crackers), finely crushed

  • 125g Unsalted butter, melted

  • The Vanilla Cream Filling:

  • 300g Cream cheese, softened at room temperature

  • 100g Powdered sugar (Icing sugar)

  • 200ml Heavy cream 33-35% fat

  • 100ml Water

  • 5g Agar-agar (or 10g gelatin powder)

  • 1 tsp Vanilla extract

  • The Berry Topping:

  • 200g Mixed berries (strawberries, blueberries, raspberries), fresh or frozen

  • 1 packet Berry-flavored gelatin (jello)

  • 1 cup Boiling water

  • 1 cup Cold water

Directions

  • Prepare the Mold: Line a rectangular mold (20×15 cm / 8×6 inch) with parchment paper or plastic wrap for easy removal.
  • The Base: Combine the finely crushed biscuits and melted butter until it looks like wet sand. Press the mixture firmly into the bottom of the prepared mold to create a solid base.
